Mediterranean Chickpea Salad
serves 4
Ingredients
- 1 cn chickpeas, drained, rinsed
- 1/2 ea cucumber, large dice
- 1 C cherry tomatoes, halved
- 8 ea kalamata olives, halved
- 8 ea manzanilla olives, halved
- 1/4 C red onion, fine slice
- 3 T fresh mint, chopped
- 1/4 C fresh parsley, chopped
- 1/4 C banana peppers, sliced, pickled
- 1/2 C feta cheese, crumbled
- 1 T Dijon mustard
- 2 T fresh lemon juice
- 2 T olive oil
- 2 C hummus
- Options: bacon, ham
Instructions
- In a large bowl, whisk together the mustard, olive oil and lemon juice, then season to taste.
- Toss in the remaining ingredients.
- Plate and serve.
